Easter Treat

We thought we would share our favourite recipe for you to make over the Easter weekend!
We think nothing is more Easter than Cadbury Mini Eggs and hands down, these brownies will be the fudgiest brownies on the block!

EASTER CHOCOLATE BROWNIES

Ingredients

185g Dark Chocolate
50g Milk Chocolate
185g Unsalted Butter
85g Plain Flour
40g Cocoa Powder
3 Large Eggs
275g Caster Sugar
Cadbury Mini Eggs


Method

  1. Preheat the oven to 200° (gas mark 6).

  2. Melt the unsalted butter and 185g dark chocolate together in a bowl, over a pan of hot water. Once melted, leave on the side to cool to room temperature.

  3. Tip in 85g plain flour and 40g cocoa powder into a sieve held over a bowl.

  4. With a knife, chop 50g milk chocolate into chunks.

  5. Break 3 large eggs into a bowl and tip in 275g caster sugar. With an electric mixer, whisk the eggs and sugar until they look thick and creamy. You will know when the mixture is ready when it becomes really pale and about double its original volume.

  6. Pour the cooled chocolate mixture into the eggy mousse, then gently fold together with a spatula.

  7. Mix in the cocoa and flour mixture. Gently fold in the mixture. It will look dry and dusty at first, but if you keep going very gently and with patience it will end up looking gungy and fudgy.

  8. Finally, mix in the dark chocolate until they are dotted throughout.

  9. Pour the mixture into a prepared tin. After pouring the brownie batter into the tin and smoothing it down, it is now time to add in the Cadbury Mini Eggs. TIP: to make cutting the brownies easier, try not to place eggs where you will want to cut the brownies!

  10. Bake the brownies in the pre-heated oven for 25 minutes. If the brownie wobbles in the middle it is not quite done, so bake for another 5 minutes until the top has a shiny papery crust and the sides are beginning to come away from the tin.

  11. Leave to cool for around 10 minutes before cutting into squares. Serve hot or cold, we find these brownies are extra delicious warmed up with a scoop of madagascan vanilla ice cream!
